Procedure for Making Appr. 130 grams of Garam Masala (Stepwise)

Begin by adding the following spices to a heavy-bottomed pan. Roast them over low heat, stirring continuously until they become crispy, crunchy, and emit a fragrant aroma. Once done, transfer them to a large tray or plate for cooling:

      • bay leaves (tej patta) – 4 nos. (~1 gram)
      • green cardamoms (elaichi) – 17 grams
      • cloves (lavang) – 12 grams
      • black pepper (kali mirch) – 9 grams
      • true cinnamon bark (dal chini) – 8 grams
      • nutmeg (jaiphal) – 2 grams (1/2 nutmeg)
      • nutmeg mace (javitri) – 4 strands (~1 gram)
      • star anise (chakri phool) – 3 nos. (~4 grams)
      • black cardamoms (badi elaichi) – 4 nos. (~4 grams)

Next, add 30 grams of cumin seeds to the same pan. Roast them over a low flame, stirring constantly until they become slightly darker in color, being careful not to burn them. Once they emit an aromatic scent and turn crunchy, transfer them to the same large tray or plate for cooling.

Incorporate 35 grams of coriander seeds into the pan. Stir them until they attain a slightly dark or browned hue, ensuring they do not burn. The coriander seeds are ready when they turn crunchy and release an aromatic fragrance. Transfer them to the same tray for cooling.

Introduce 8 grams (1 spoon+) of fennel seeds to the pan and roast them for just 2 minutes until they become aromatic. Fennel seeds should not be roasted deeply. Transfer them to the same tray and allow them to cool.

[In case you are using an Oven: Spread the spices evenly on a clean baking tray and place it in the oven. Position the tray on the middle rack and set the oven temperature to its lowest setting. Roast the spices until they emit a delightful aroma. In my oven, the temperature is set to 40°C (100 to 105°F).]

Once cooled, your spices are prepared for grinding. Transfer the roasted spices to a grinder jar and grind the spices into a fine powder.

Allow the ground spices to cool completely before storing the garam masala in an airtight glass jar.
